Back in January I posted my recipe for Gluten-Free, Dairy-Free Peanut Butter Cookies. I made some today and decided to take the extra precaution of making my own baking powder – the commercial stuff can sometimes have cornstarch, which takes it out of the category of gluten-free. I thought I’d share that tip with you and give you a repeat of the recipe, which is so simple:
|Only five ingredients|
1 cup peanut butter (preferably chunky)
1 cup sugar
1 tsp. baking powder (to make your own, use 1/3 tsp. baking soda and 2/3 tsp. cream of tartar – guaranteed gluten-free).
Pre-heat oven to 350 degrees. Mix ingredients together. Drop by spoonfuls on a parchment-lined cookie sheet and use a fork to press them down for baking. Bake for 15-18 minutes and allow to cool for 2 minutes before removing them to a cooling rack. Enjoy!!
