Here is a frequently requested recipe; I serve this hearty strata with a side salad of local greens simply dressed with olive oil, a fruity vinegar and some spices, and locally-raised link sausage.
Southwest Potato Strata
6 – 8 servings
2 cups shredded potatoes, southwest style (Simply Potatoes brand works best!)1 ½ cups cheddar cheese, shredded Spray a 9-inch round pie pan with non-stick spray. Combine potatoes and cheese and spread over bottom of pan. 3 eggs 1 1/2 cup milk ½ tsp salt 1 cup Bisquick Mix together and pour over potato mix. Cover and refrigerate for 1 hour – may be made in advance and refrigerated overnight. For topping: 1/2 cup cheddar cheese, shredded ½ Tbs chopped cilantro six or eight roma tomato slices Sprinkle cheddar, then cilantro on top of pie. Arrange tomato slices around edge. Preheat oven to 350 degrees. Bake in the oven for 45 to 55 minutes or until set.
