Chilled Peach Soup

I would be remiss if I let the summer peach season go by without sharing this recipe for chilled peach soup. It’s super easy and our guests love it!

We get our peaches locally – Uvilla Orchards and Ridgefield Farms are our main sources. Seconds are okay for soup – the peaches don’t have to look perfect before they go in the blender.
makes 4 servings
3 medium soft ripe peaches, chopped
1 cup peach juice
1/2 Tbl lemon or lime juice
1 cup vanilla yogurt
1 Tbl half&half, light cream or milk
1 Tbl honey
1/8 tsp ground ginger
Place all ingredients in blender and puree. Cover and chill for at least 3 hours. Garnish with fresh berries, sliced fresh unpeeled peaches, lime zest and/or mint.
